Ingredients

  • 1 kg fresh snails, cleaned and prepared
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, diced
  • 2 scotch bonnet peppers, chopped
  • 1/2 cup vegetable oil
  • 1 teaspoon ground crayfish
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the diced tomatoes, bell pepper, and scotch bonnet peppers. Cook for 5-7 minutes until the vegetables are soft.
  4. Stir in the ground crayfish, dried thyme, paprika, salt, and pepper.
  5. Add the cleaned snails to the pot and stir to coat them with the spice mixture.
  6. Pour in the chicken or vegetable broth and bring the stew to a simmer.
  7. Cover the pot and let the stew cook for 1 hour, stirring occasionally, until the snails are tender.
  8. Adjust the seasoning if needed and serve the Nyama Nyama hot with rice or fufu.
