Nyama Nyama (snail Stew)
Nyama Nyama, also known as Snail Stew, is a popular dish in Cameroonian cuisine. This flavorful stew is made with tender snails and a rich, aromatic sauce that is perfect for serving over a bed of fluffy rice or with a side of fufu.
Ingredients
- 1 kg fresh snails, cleaned and prepared
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, diced
- 2 scotch bonnet peppers, chopped
- 1/2 cup vegetable oil
- 1 teaspoon ground crayfish
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the diced tomatoes, bell pepper, and scotch bonnet peppers. Cook for 5-7 minutes until the vegetables are soft.
- Stir in the ground crayfish, dried thyme, paprika, salt, and pepper.
- Add the cleaned snails to the pot and stir to coat them with the spice mixture.
- Pour in the chicken or vegetable broth and bring the stew to a simmer.
- Cover the pot and let the stew cook for 1 hour, stirring occasionally, until the snails are tender.
- Adjust the seasoning if needed and serve the Nyama Nyama hot with rice or fufu.
