Nyamdro (tibetan Spiced Lentil Soup)
Nyamdro is a traditional Tibetan spiced lentil soup that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt to taste.
- Serve the Nyamdro hot, garnished with fresh cilantro.
