Nyamdro is a traditional Tibetan spiced lentil soup that is hearty, flavorful, and perfect for warming up on a cold day.

Nyamdro (tibetan Spiced Lentil Soup)

Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  3. Stir in the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until the lentils are tender.
  5. Season with salt to taste.
  6. Serve the Nyamdro hot, garnished with fresh cilantro.
