Nyonya Chicken Curry (kari Kapitan)

Ingredients

  • 1 whole chicken, cut into pieces
  • 5 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 cup coconut milk
  • 2 tablespoons tamarind paste
  • 3 tablespoons Nyonya curry powder
  • 2 tablespoons vegetable oil
  • Salt and sugar to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the shallots, garlic, lemongrass, and kaffir lime leaves. Cook until fragrant.
  2. Add the chicken pieces and cook until they are no longer pink.
  3. Stir in the Nyonya curry powder and tamarind paste. Pour in the coconut milk and bring to a simmer.
  4. Reduce the heat and let the curry simmer for 30-40 minutes, or until the chicken is tender and the flavors have melded together.
  5. Season with salt and sugar to taste. Serve the Nyonya Chicken Curry hot with steamed rice.
