Ingredients
- 1 whole chicken, cut into pieces
- 5 shallots, finely chopped
- 3 cloves garlic, minced
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 1 cup coconut milk
- 2 tablespoons tamarind paste
- 3 tablespoons Nyonya curry powder
- 2 tablespoons vegetable oil
- Salt and sugar to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the shallots, garlic, lemongrass, and kaffir lime leaves. Cook until fragrant.
- Add the chicken pieces and cook until they are no longer pink.
- Stir in the Nyonya curry powder and tamarind paste. Pour in the coconut milk and bring to a simmer.
- Reduce the heat and let the curry simmer for 30-40 minutes, or until the chicken is tender and the flavors have melded together.
- Season with salt and sugar to taste. Serve the Nyonya Chicken Curry hot with steamed rice.
