Obbattu Dessert (heavenly Holige Parfait)
Obbattu Dessert (Heavenly Holige Parfait) is a delightful and traditional dessert from Uttara Karnataka Cuisine. This parfait is a modern twist on the classic Obbattu, a sweet flatbread filled with a mixture of jaggery, lentils, and cardamom.
Ingredients
- 1 cup chana dal
- 1 cup jaggery
- 1 tsp cardamom powder
- 1 cup all-purpose flour
- 1/4 tsp turmeric powder
- 1/4 cup ghee
- 1/4 cup milk
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 cup raisins
- 1/2 cup yogurt
- 1/4 cup honey
Instructions
- Wash and cook the chana dal until soft. Drain any excess water and mash the dal.
- Heat a pan and add the mashed dal, jaggery, and cardamom powder. Cook until the mixture thickens. Let it cool.
- In a bowl, mix the all-purpose flour, turmeric powder, ghee, and milk to form a smooth dough. Divide the dough into small balls.
- Roll out each ball into a small disc. Place a spoonful of the dal-jaggery filling in the center and seal the edges to form a stuffed flatbread. Cook on a hot griddle until golden brown on both sides.
- Once the obbattu is cool, crumble it to form the base of the parfait.
- In serving glasses, layer the crumbled obbattu, chopped nuts, raisins, yogurt, and honey to create a parfait. Repeat the layers as desired.
- Refrigerate the parfaits for at least 1 hour before serving.
