Obbattu (heavenly Holige)
Obbattu, also known as Holige, is a traditional sweet flatbread from Uttara Karnataka Cuisine. It is made with a sweet filling of jaggery and lentils, encased in a thin, soft dough. This heavenly dessert is a must-have during festivals and special occasions.
Ingredients
- 1 cup maida (all-purpose flour)
- 1/4 tsp turmeric powder
- 1 cup chana dal (split chickpeas)
- 1 cup jaggery, grated
- 1/2 tsp cardamom powder
- 2 tbsp ghee (clarified butter)
- Water, as needed
- Salt, to taste
Instructions
- Wash and soak the chana dal for 2 hours. Then, pressure cook it until soft. Drain any excess water and let it cool.
- In a pan, heat ghee and add the cooked chana dal, jaggery, and cardamom powder. Cook until the mixture thickens. Let it cool.
- In a bowl, mix maida, turmeric powder, and a pinch of salt. Add water gradually to make a soft dough. Divide the dough into small balls.
- Take a dough ball, flatten it, and place a spoonful of the chana dal-jaggery filling in the center. Enclose the filling completely with the dough and roll it out into a thin, round obbattu.
- Cook the obbattu on a hot griddle, applying ghee on both sides until golden brown.
- Serve the obbattu hot with a dollop of ghee or a scoop of ice cream.
