Octopus Ceviche (ceviche De Pulpo)

Ingredients

  • 2 lbs octopus, cleaned and chopped
  • 1 red onion, thinly sliced
  • 1 cup fresh lime juice
  • 1 cup fresh orange juice
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1/2 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the octopus, red onion, lime juice, and orange juice. Let it marinate in the refrigerator for at least 2 hours.
  2. After marinating, add the tomatoes, bell pepper, jalapeño, and cilantro to the bowl. Season with salt and pepper, and mix well.
  3. Chill the ceviche for another 30 minutes before serving.
