Ingredients
- 2 lbs octopus, cleaned and tenderized
- 1/2 cup olive oil
- 4 cloves garlic, minced

- Salt and pepper to taste
- 4 large potatoes, peeled and quartered
- 1/4 cup chopped parsley
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix the olive oil, minced garlic, paprika, salt, and pepper.
- Place the octopus and potatoes in a large baking dish. Drizzle the olive oil mixture over the octopus and potatoes, making sure they are evenly coated.
- Cover the baking dish with foil and roast in the preheated oven for 45 minutes.
- Remove the foil and continue roasting for an additional 15 minutes, or until the octopus and potatoes are tender and golden brown.
