Ingredients
- 2 lbs octopus, cleaned and chopped
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 carrot, sliced
- 1 potato, diced
- 1 cup coconut milk
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the octopus and cook for 5 minutes.
- Stir in the tomatoes, carrot, and potato.
- Pour in the water and bring to a boil. Reduce heat and simmer for 1 hour.
