Ofada Paella

Ingredients

  • 2 cups of Ofada rice
  • 400g of assorted meats (beef, chicken, and/or shrimp)
  • 1 onion, chopped
  • 2 bell peppers, sliced
  • 3 tomatoes, diced
  • 2 cups of chicken or beef stock
  • 1/2 cup of vegetable oil
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or paella pan over medium heat.
  2. Add the assorted meats and cook until browned.
  3. Add the chopped onion, bell peppers, and tomatoes. Cook until the vegetables are softened.
  4. Stir in the Ofada rice, thyme, curry powder, and paprika. Cook for 2 minutes.
  5. Pour in the chicken or beef stock and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it rest for 5 minutes before serving.
