Ofada Paella
Ofada Paella is a delicious fusion dish that combines the rich flavors of Nigerian cuisine with the traditional Spanish paella. This dish is a perfect representation of the diverse and vibrant culinary landscape of Nigeria.
Ingredients
- 2 cups of Ofada rice
- 400g of assorted meats (beef, chicken, and/or shrimp)
- 1 onion, chopped
- 2 bell peppers, sliced
- 3 tomatoes, diced
- 2 cups of chicken or beef stock
- 1/2 cup of vegetable oil
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan or paella pan over medium heat.
- Add the assorted meats and cook until browned.
- Add the chopped onion, bell peppers, and tomatoes. Cook until the vegetables are softened.
- Stir in the Ofada rice, thyme, curry powder, and paprika. Cook for 2 minutes.
- Pour in the chicken or beef stock and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it rest for 5 minutes before serving.
