Ofada Rice Delight
Ofada Rice Delight is a traditional Nigerian dish made with locally grown Ofada rice and a flavorful stew. This dish is a staple in Nigerian cuisine and is often enjoyed during special occasions and gatherings.
Ingredients
- 2 cups of Ofada rice
- 1 pound of assorted meat (beef, tripe, and/or cow feet)
- 1 cup of palm oil
- 2 onions, chopped
- 3-4 fresh tomatoes, blended
- 2 bell peppers, chopped
- 2 scotch bonnet peppers, chopped
- 2 tablespoons of ground crayfish
- 1 teaspoon of locust beans (iru)
- Salt to taste
Instructions
- Wash the Ofada rice thoroughly and parboil for 10 minutes. Drain and set aside.
- In a pot, cook the assorted meat with onions and salt until tender.
- Heat the palm oil in a separate pot, add chopped onions, and sauté until translucent.
- Add the blended tomatoes, bell peppers, scotch bonnet peppers, and cook until the oil separates.
- Add the cooked meat, ground crayfish, locust beans, and salt to the stew. Simmer for 10-15 minutes.
- In another pot, parboil the Ofada rice for 5 minutes, then drain and transfer to a pot. Add water and cook until the rice is tender.
- Serve the Ofada rice with the flavorful stew and enjoy!
