Ingredients

  • 2 cups Arborio rice
  • 4 cups Ofe Owerri soup
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup palm oil
  • 1 cup assorted meats (such as beef, tripe, and cow foot), cooked and shredded
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, chopped
  • 1 teaspoon ground crayfish
  • Salt and pepper to taste

Instructions

  1. Heat the palm oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until fragrant.
  3. Stir in the diced red bell pepper and scotch bonnet pepper, then add the shredded assorted meats.
  4. Pour in the Ofe Owerri soup and bring to a gentle simmer.
  5. Stir in the Arborio rice and ground crayfish, then season with salt and pepper.
