Ingredients
- 2 cups chopped spinach
- 1 cup chopped okra
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- 1/2 cup palm oil
- 1/4 cup ground crayfish
- 1 teaspoon ground iru (fermented locust beans)
- 4 cups vegetable or chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the ground crayfish and iru, and cook for 2 minutes.
- Add the chopped tomatoes, bell pepper, and scotch bonnet pepper, and cook for 5 minutes.
- Pour in the broth and bring the soup to a simmer.
- Add the chopped okra and spinach, and simmer for 15 minutes.
- Season with salt and pepper to taste.
