Ingredients
- 1 pound assorted meats (beef, tripe, and cow foot)
- 2 cups Oha leaves, shredded
- 1 onion, chopped
- 2 tablespoons palm oil
- 2 tablespoons ground crayfish
- 2 scotch bonnet peppers, chopped
- 1 tablespoon ogiri (fermented locust beans)
- 3 cups beef stock
- Salt and pepper to taste
Instructions
- In a pot, boil the assorted meats with onions and salt until tender, then set aside.
- Heat the palm oil in a separate pot, add the chopped onions, and sauté until translucent.
- Add the ground crayfish, scotch bonnet peppers, and ogiri to the pot, and stir well.
- Pour in the beef stock and bring to a gentle boil.
- Add the cooked assorted meats and simmer for 10 minutes.
- Gently stir in the shredded Oha leaves and cook for an additional 5 minutes.
- Season with salt and pepper to taste, then remove from heat.
