Ingredients

  • 1 pound assorted meats (beef, tripe, and cow foot)
  • 2 cups Oha leaves, shredded
  • 1 onion, chopped
  • 2 tablespoons palm oil
  • 2 tablespoons ground crayfish
  • 2 scotch bonnet peppers, chopped
  • 1 tablespoon ogiri (fermented locust beans)
  • 3 cups beef stock
  • Salt and pepper to taste

Instructions

  1. In a pot, boil the assorted meats with onions and salt until tender, then set aside.
  2. Heat the palm oil in a separate pot, add the chopped onions, and sauté until translucent.
  3. Add the ground crayfish, scotch bonnet peppers, and ogiri to the pot, and stir well.
  4. Pour in the beef stock and bring to a gentle boil.
  5. Add the cooked assorted meats and simmer for 10 minutes.
  6. Gently stir in the shredded Oha leaves and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste, then remove from heat.
