Ingredients
- 400g rice noodles
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1 cup snow peas
- 1 block firm tofu, cubed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the coconut milk and vegetable broth over medium heat.
- Add the sliced onion, minced garlic, curry powder, and turmeric. Stir well to combine.
- Once the broth is simmering, add the carrots, bell peppers, mushrooms, and tofu. Let it simmer for 15 minutes.
- While the soup is simmering, cook the rice noodles according to the package instructions.
- Add the snow peas to the soup and cook for an additional 5 minutes.
- Season the soup with salt and pepper to taste.
- To serve, place a portion of cooked rice noodles in a bowl and ladle the coconut curry soup over the noodles.
- Garnish with fresh cilantro and serve hot.
