Ingredients

  • 400g rice noodles
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup snow peas
  • 1 block firm tofu, cubed
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the coconut milk and vegetable broth over medium heat.
  2. Add the sliced onion, minced garlic, curry powder, and turmeric. Stir well to combine.
  3. Once the broth is simmering, add the carrots, bell peppers, mushrooms, and tofu. Let it simmer for 15 minutes.
  4. While the soup is simmering, cook the rice noodles according to the package instructions.
  5. Add the snow peas to the soup and cook for an additional 5 minutes.
  6. Season the soup with salt and pepper to taste.
  7. To serve, place a portion of cooked rice noodles in a bowl and ladle the coconut curry soup over the noodles.
  8. Garnish with fresh cilantro and serve hot.
