Ingredients

  • 2 cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, thinly sliced

Instructions

  1. In a small bowl, mix together rice vinegar, sugar, sesame oil, soy sauce, sesame seeds, and red pepper flakes to make the dressing.
  2. Place the sliced cucumbers in a large bowl and pour the dressing over them.
  3. Toss the cucumbers gently to coat them evenly with the dressing.
  4. Sprinkle the sliced green onions on top and toss lightly.
  5. Refrigerate for at least 30 minutes before serving.
