Ojingeo Sundubu Jjigae (오징어순두부찌개)

Ingredients

  • 1 small squid, cleaned and sliced
  • 1/2 onion, thinly sliced
  • 1/2 zucchini, sliced
  • 1/2 package (about 200g) soft tofu, cut into cubes
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 red chili, sliced (optional)
  • 1 1/2 cups anchovy or seafood stock
  • 1 tablespoon Korean red pepper flakes (gochugaru)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste

Instructions

  1. In a pot, sauté the squid, onion, zucchini, and garlic until the squid is cooked through.
  2. Add the stock, red pepper flakes, and soy sauce. Bring to a boil.
  3. Gently add the tofu, stirring carefully to avoid breaking it.
  4. Simmer for 5-7 minutes, then add the green onions and chili (if using). Cook for another 2-3 minutes.
  5. Drizzle with sesame oil and season with salt to taste.
