Okinawan Shrimp Curry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups Okinawan sweet potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced sweet potatoes and sliced carrots to the pot, and cook for 5 minutes, stirring occasionally.
  3. Sprinkle the curry powder over the vegetables, and stir to coat evenly.
  4. Pour in the coconut milk and chicken or vegetable broth, and bring the mixture to a simmer.
  5. Add the peeled and deveined shrimp to the pot, and simmer for 10-15 minutes, or until the shrimp are pink and cooked through.
  6. Season the curry with salt and pepper to taste.
  7. Serve the Okinawan Shrimp Curry hot over steamed rice.
