Okinawan Shrimp Curry

Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups Okinawan sweet potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 tbsp curry powder
- 1 can (14 oz) coconut milk
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced sweet potatoes and sliced carrots to the pot, and cook for 5 minutes, stirring occasionally.
- Sprinkle the curry powder over the vegetables, and stir to coat evenly.
- Pour in the coconut milk and chicken or vegetable broth, and bring the mixture to a simmer.
- Add the peeled and deveined shrimp to the pot, and simmer for 10-15 minutes, or until the shrimp are pink and cooked through.
- Season the curry with salt and pepper to taste.
