Okinawan Shrimp Skewers

Ingredients
- 1 pound of large shrimp, peeled and deveined
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon mirin
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 green onion, thinly sliced
- 8 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together the soy sauce, brown sugar, garlic, ginger, mirin, vegetable oil, sesame oil, black pepper, and red pepper flakes.
- Add the shrimp to the bowl and toss to coat. Marinate for 15 minutes.
- Thread the shrimp onto the soaked bamboo skewers, dividing equally.
- Heat a grill pan or stovetop grill over medium-high heat. Grill the shrimp skewers for 2-3 minutes per side, until they are pink and opaque.
- Transfer the skewers to a serving platter and sprinkle with sliced green onions.
