Okinawan Shrimp Skewers

Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon mirin
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 green onion, thinly sliced
  • 8 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, whisk together the soy sauce, brown sugar, garlic, ginger, mirin, vegetable oil, sesame oil, black pepper, and red pepper flakes.
  2. Add the shrimp to the bowl and toss to coat. Marinate for 15 minutes.
  3. Thread the shrimp onto the soaked bamboo skewers, dividing equally.
  4. Heat a grill pan or stovetop grill over medium-high heat. Grill the shrimp skewers for 2-3 minutes per side, until they are pink and opaque.
  5. Transfer the skewers to a serving platter and sprinkle with sliced green onions.
