Okinawan Soba Salad

Ingredients

  • 2 bundles of Okinawan soba noodles
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1/4 cup of edamame
  • 1/4 cup of sliced green onions
  • 1/4 cup of shredded purple cabbage
  • 1/4 cup of roasted peanuts
  • 1/4 cup of cilantro leaves

Instructions

  1. Cook the Okinawan soba noodles according to the package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, cucumber, carrot, red bell pepper, edamame, green onions, and purple cabbage.
  3. In a small bowl, whisk together the dressing ingredients: 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, 1 tablespoon of honey, and a pinch of red pepper flakes.
  4. Pour the dressing over the soba noodle mixture and toss to combine.
  5. Garnish the salad with roasted peanuts and cilantro leaves before serving.
