Ingredients
- 2 bundles of Okinawan soba noodles
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 1/4 cup of edamame
- 1/4 cup of sliced green onions
- 1/4 cup of shredded purple cabbage
- 1/4 cup of roasted peanuts
- 1/4 cup of cilantro leaves
Instructions
- Cook the Okinawan soba noodles according to the package instructions. Drain and rinse with cold water.
- In a large bowl, combine the cooked soba noodles, cucumber, carrot, red bell pepper, edamame, green onions, and purple cabbage.
- In a small bowl, whisk together the dressing ingredients: 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 1 tablespoon of sesame oil, 1 tablespoon of honey, and a pinch of red pepper flakes.
- Pour the dressing over the soba noodle mixture and toss to combine.
- Garnish the salad with roasted peanuts and cilantro leaves before serving.
