Okinawan Tofu Stir-fry

Ingredients

  • 1 block of firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 carrot, julienned
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then cut into cubes.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add the tofu and stir-fry until golden brown, then remove from the pan and set aside.
  4. In the same pan, add sesame oil and sauté the garlic and ginger until fragrant.
  5. Add the onion, bell peppers, snap peas, and carrot, and stir-fry for a few minutes until the vegetables are tender-crisp.
  6. Return the tofu to the pan, then add soy sauce and rice vinegar. Stir to combine and season with salt and pepper.
  7. Once everything is heated through, remove from heat and serve hot.
