Okinawan Tofu Stir-fry
This Okinawan Tofu Stir-Fry is a delicious and healthy dish that showcases the flavors of Okinawan cuisine. Packed with colorful vegetables and protein-rich tofu, this stir-fry is a perfect weeknight meal that comes together quickly.
Ingredients
- 1 block of firm tofu, cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then cut into cubes.
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the tofu and stir-fry until golden brown, then remove from the pan and set aside.
- In the same pan, add sesame oil and sauté the garlic and ginger until fragrant.
- Add the onion, bell peppers, snap peas, and carrot, and stir-fry for a few minutes until the vegetables are tender-crisp.
- Return the tofu to the pan, then add soy sauce and rice vinegar. Stir to combine and season with salt and pepper.
- Once everything is heated through, remove from heat and serve hot.
