Instructions
- In a large bowl, whisk together the flour, dashi stock, and eggs until smooth.
- Stir in the cabbage, green onions, tenkasu, and cooked shrimp until well combined.
- Heat a non-stick griddle or large skillet over medium heat and lightly oil the surface.
- Pour a quarter of the batter onto the griddle and spread it into a circle.
- Arrange a few slices of pork belly on top of the batter.
- Cook for 5 minutes, then flip the okonomiyaki and cook for an additional 5 minutes until golden brown and cooked through.
- Transfer the okonomiyaki to a plate and drizzle with okonomiyaki sauce and mayonnaise.
- Sprinkle with aonori and katsuobushi before serving.
