  • 1/4 cup katsuobushi (bonito flakes)

Instructions

  1. In a large bowl, whisk together the flour, dashi stock, and eggs until smooth.
  2. Stir in the cabbage, green onions, tenkasu, and cooked shrimp until well combined.
  3. Heat a non-stick griddle or large skillet over medium heat and lightly oil the surface.
  4. Pour a quarter of the batter onto the griddle and spread it into a circle.
  5. Arrange a few slices of pork belly on top of the batter.
  6. Cook for 5 minutes, then flip the okonomiyaki and cook for an additional 5 minutes until golden brown and cooked through.
  7. Transfer the okonomiyaki to a plate and drizzle with okonomiyaki sauce and mayonnaise.
