Ingredients
- 2 cups shredded cabbage
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup dashi stock
- 4 slices bacon, chopped
- 1/4 cup chopped scallions
- 1/4 cup okonomiyaki sauce
- 1/4 cup mayonnaise
- 1/4 cup bonito flakes
- 1/4 cup shredded nori (seaweed)
- 1/2 cup shredded mozzarella cheese
Instructions
- In a large bowl, mix together the shredded cabbage, flour, eggs, and dashi stock to form a batter.
- Heat a non-stick pan over medium heat and add the chopped bacon. Cook until crispy, then remove from the pan and set aside.
- Pour a ladleful of the cabbage batter into the pan, spreading it out to form a pancake. Cook for 3-4 minutes on each side until golden brown and cooked through.
- Once the okonomiyaki pancakes are cooked, spread a layer of okonomiyaki sauce and mayonnaise on top of each pancake.
- Sprinkle the cooked bacon, scallions, mozzarella cheese, bonito flakes, and shredded nori over the top of the pancakes.
- Place the pan under the broiler for 2-3 minutes until the cheese is melted and bubbly.
- Slice the okonomiyaki pizzas and serve hot.
