Ingredients

  • 2 cups shredded cabbage
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup dashi stock
  • 4 slices bacon, chopped
  • 1/4 cup chopped scallions
  • 1/4 cup okonomiyaki sauce
  • 1/4 cup mayonnaise
  • 1/4 cup bonito flakes
  • 1/4 cup shredded nori (seaweed)
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. In a large bowl, mix together the shredded cabbage, flour, eggs, and dashi stock to form a batter.
  2. Heat a non-stick pan over medium heat and add the chopped bacon. Cook until crispy, then remove from the pan and set aside.
  3. Pour a ladleful of the cabbage batter into the pan, spreading it out to form a pancake. Cook for 3-4 minutes on each side until golden brown and cooked through.
  4. Once the okonomiyaki pancakes are cooked, spread a layer of okonomiyaki sauce and mayonnaise on top of each pancake.
  5. Sprinkle the cooked bacon, scallions, mozzarella cheese, bonito flakes, and shredded nori over the top of the pancakes.
  6. Place the pan under the broiler for 2-3 minutes until the cheese is melted and bubbly.
  7. Slice the okonomiyaki pizzas and serve hot.
