Okra and Lamb Stew (Mafé)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup peanut butter
  • 2 cups chicken or beef broth
  • 2 cups chopped okra
  • 1 can diced tomatoes
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb over medium heat.
  2. Add the chopped onion and minced garlic, and cook until the onion is soft.
  3. Stir in the peanut butter and broth, and bring to a simmer.
  4. Add the chopped okra and diced tomatoes, and season with salt and pepper.
  5. Cover and simmer for 45 minutes to 1 hour, or until the lamb is tender and the stew has thickened.
  6. Serve the mafé hot over rice or couscous.
