Okra and Lamb Stew (Mafé)
Mafé is a traditional Malian stew made with okra, lamb, and a rich peanut sauce. This hearty and flavorful dish is a staple in Malian cuisine and is perfect for a cozy family dinner or a special gathering.
Ingredients
- 1 lb lamb, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup peanut butter
- 2 cups chicken or beef broth
- 2 cups chopped okra
- 1 can diced tomatoes
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the chopped onion and minced garlic, and cook until the onion is soft.
- Stir in the peanut butter and broth, and bring to a simmer.
- Add the chopped okra and diced tomatoes, and season with salt and pepper.
- Cover and simmer for 45 minutes to 1 hour, or until the lamb is tender and the stew has thickened.
- Serve the mafé hot over rice or couscous.
