Okra And Seafood Stir-fry

Ingredients
- 1 lb okra, sliced
- 1 lb mixed seafood (shrimp, squid, and/or fish)
- 1 onion, sliced
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 scotch bonnet pepper, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add onions, garlic, ginger, and scotch bonnet pepper. Stir-fry for 2-3 minutes until fragrant.
- Add okra and tomatoes, and cook for 5 minutes, stirring occasionally.
- Add the mixed seafood and cook for an additional 5-7 minutes until the seafood is cooked through.
- Season with salt and pepper to taste.
