Ingredients

  • 1 lb okra, sliced
  • 1 lb mixed seafood (shrimp, squid, and/or fish)
  • 1 onion, sliced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 scotch bonnet pepper, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add onions, garlic, ginger, and scotch bonnet pepper. Stir-fry for 2-3 minutes until fragrant.
  3. Add okra and tomatoes, and cook for 5 minutes, stirring occasionally.
  4. Add the mixed seafood and cook for an additional 5-7 minutes until the seafood is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
