Ingredients

  • 1 pound okra, washed and dried
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Trim the ends of the okra and slice them into 1-inch pieces.
  2. Heat oil in a pan and add cumin seeds. Once the seeds crackle, add the chopped onions and sauté until golden brown.
  3. Add the ginger and garlic paste, and sauté for a minute.
  4. Now, add the chopped tomatoes and cook until they turn soft and the oil separates.
  5. Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for a few minutes.
  6. Add the sliced okra and mix well. Cover and cook until the okra is tender, stirring occasionally.
  7. Sprinkle garam masala and garnish with fresh cilantro before serving.
