Okra Curry (punjabi Bhindi Masala)
Okra Curry, also known as Punjabi Bhindi Masala, is a flavorful and aromatic dish from the Punjabi cuisine. This vegetarian curry is made with tender okra, onions, tomatoes, and a blend of aromatic spices, creating a delicious and satisfying meal.
Ingredients
- 1 pound okra, washed and dried
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Trim the ends of the okra and slice them into 1-inch pieces.
- Heat oil in a pan and add cumin seeds. Once the seeds crackle, add the chopped onions and sauté until golden brown.
- Add the ginger and garlic paste, and sauté for a minute.
- Now, add the chopped tomatoes and cook until they turn soft and the oil separates.
- Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for a few minutes.
- Add the sliced okra and mix well. Cover and cook until the okra is tender, stirring occasionally.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
