Ingredients

  • 1 cup ground egusi (melon seeds)
  • 2 cups chopped okra
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cups vegetable broth
  • 1/2 cup palm oil
  • 1 teaspoon ground crayfish
  • Salt and pepper to taste

Instructions

  1. In a pot, heat the palm oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the chopped tomatoes and cook until softened.
  4. Add the ground egusi and stir to combine with the vegetables.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the chopped okra and ground crayfish, then season with salt and pepper.
  7. Cover the pot and let the soup simmer for 15-20 minutes, stirring occasionally.
  8. Once the okra is tender, the soup is ready to serve.
