Ingredients
- 1 cup ground egusi (melon seeds)
- 2 cups chopped okra
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cups vegetable broth
- 1/2 cup palm oil
- 1 teaspoon ground crayfish
- Salt and pepper to taste
Instructions
- In a pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the chopped tomatoes and cook until softened.
- Add the ground egusi and stir to combine with the vegetables.
- Pour in the vegetable broth and bring to a simmer.
- Add the chopped okra and ground crayfish, then season with salt and pepper.
- Cover the pot and let the soup simmer for 15-20 minutes, stirring occasionally.
