Okra Fry (bendakaya Vepudu)
Okra Fry, also known as Bendakaya Vepudu, is a popular Andhra Cuisine dish that is simple to make and bursting with flavor. This crispy and spicy okra stir-fry is a perfect side dish to complement any meal.
Ingredients
- 500g okra, washed and dried
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2-3 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Trim the ends of the okra and cut them into 1-inch pieces.
- Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add the okra pieces, turmeric powder, red chili powder, and salt. Mix well and cook covered on medium heat, stirring occasionally.
- Cook until the okra is tender and slightly crispy. Garnish with fresh coriander leaves.
- Serve hot as a side dish with rice or roti.
