Okra Fry (bendakaya Vepudu)

Ingredients

  • 500g okra, washed and dried
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2-3 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Trim the ends of the okra and cut them into 1-inch pieces.
  2. Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions turn golden brown.
  3. Add the okra pieces, turmeric powder, red chili powder, and salt. Mix well and cook covered on medium heat, stirring occasionally.
  4. Cook until the okra is tender and slightly crispy. Garnish with fresh coriander leaves.
  5. Serve hot as a side dish with rice or roti.
