Okra Tamarind Stew (bendakaya Pulusu)

Ingredients

  • 1/2 kg okra, washed and chopped
  • 1 lemon-sized tamarind, soaked in water
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • 2 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until the onions turn translucent.
  2. Add the chopped okra and sauté for 5 minutes.
  3. Extract the tamarind juice from the soaked tamarind and add it to the pan. Add turmeric powder, red chili powder, and salt. Mix well.
  4. Pour in 2 cups of water and let the stew simmer for 15-20 minutes until the okra is cooked and the stew thickens.
  5. Garnish with fresh coriander leaves and serve hot with steamed rice.
