Okra Tamarind Stew (bendakaya Pulusu)
Okra Tamarind Stew (Bendakaya Pulusu) is a traditional Andhra Cuisine dish that is tangy, spicy, and full of flavor. It is a popular stew made with okra, tamarind, and a blend of aromatic spices.
Ingredients
- 1/2 kg okra, washed and chopped
- 1 lemon-sized tamarind, soaked in water
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until the onions turn translucent.
- Add the chopped okra and sauté for 5 minutes.
- Extract the tamarind juice from the soaked tamarind and add it to the pan. Add turmeric powder, red chili powder, and salt. Mix well.
- Pour in 2 cups of water and let the stew simmer for 15-20 minutes until the okra is cooked and the stew thickens.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
