Ingredients
- 2 cups of okra, finely chopped
- 2 cups of cooked mashed potatoes
- 1 cup of all-purpose flour
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/4 cup of olive oil
- 1/4 cup of grated Parmesan cheese
Instructions
- In a large bowl, combine the chopped okra, mashed potatoes, flour, salt, and pepper. Mix until a dough forms.
- Divide the dough into small portions and roll each portion into a long rope. Cut the rope into bite-sized pieces to form the gnocchi.
- Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook for 2-3 minutes, or until they float to the surface.
- Remove the cooked gnocchi with a slotted spoon and transfer to a serving dish.
