Old Clothes Empanadas (ropa Vieja Empanadas)
Empanadas are a popular dish in Cuban cuisine, and this recipe puts a delicious twist on the traditional empanada by filling it with flavorful "ropa vieja," or old clothes, a savory shredded beef dish.
Ingredients
- 2 lbs flank steak, cooked and shredded
- 1 onion, finely chopped
- 1 green bell pepper, finely chopped
- 3 garlic cloves, minced
- 1 cup tomato sauce
- 1/2 cup beef broth
- 1/4 cup dry white wine
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 12 empanada discs (store-bought or homemade)
- 1 egg, beaten (for egg wash)
Instructions
- In a large skillet, sauté the onion, bell pepper, and garlic until softened.
- Add the shredded beef to the skillet and mix well with the sautéed vegetables.
- Pour in the tomato sauce, beef broth, white wine, cumin, oregano, salt, and pepper. Stir to combine and simmer for 15-20 minutes.
- Preheat the oven to 375°F (190°C).
- Place a spoonful of the beef mixture onto each empanada disc, fold over, and seal the edges with a fork.
- Brush the empanadas with the beaten egg for a golden finish.
- Bake for 20-25 minutes or until the empanadas are golden brown.
