Old Clothes Empanadas (ropa Vieja Empanadas)

Ingredients

  • 2 lbs flank steak, cooked and shredded
  • 1 onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 3 garlic cloves, minced
  • 1 cup tomato sauce
  • 1/2 cup beef broth
  • 1/4 cup dry white wine
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • 12 empanada discs (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large skillet, sauté the onion, bell pepper, and garlic until softened.
  2. Add the shredded beef to the skillet and mix well with the sautéed vegetables.
  3. Pour in the tomato sauce, beef broth, white wine, cumin, oregano, salt, and pepper. Stir to combine and simmer for 15-20 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Place a spoonful of the beef mixture onto each empanada disc, fold over, and seal the edges with a fork.
  6. Brush the empanadas with the beaten egg for a golden finish.
  7. Bake for 20-25 minutes or until the empanadas are golden brown.
