Ropa Vieja, or "Old Clothes," is a traditional dish from Canarian cuisine that features tender shredded beef in a savory tomato-based sauce. This hearty and flavorful meal is perfect for a cozy family dinner or a special gathering with friends.
Ingredients
- 2 lbs flank steak
- 1 onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 3 tbsp olive oil
Instructions
- Season the flank steak with salt, pepper, cumin, and paprika.
- Heat 2 tbsp of olive oil in a large pot over medium-high heat. Sear the steak on both sides until browned, then remove and set aside.
- Heat the remaining 1 tbsp of olive oil in the same pot. Add the diced onion, bell pepper, and garlic. Cook until the vegetables are soft.
- Pour in the crushed tomatoes and beef broth. Stir to combine.
- Return the seared steak to the pot. Cover and simmer for 1.5-2 hours, or until the meat is tender and easily shreds with a fork.
- Remove the steak from the pot and shred it using two forks. Return the shredded meat to the pot and simmer for an additional 15 minutes.
- Adjust the seasoning with salt and pepper if needed.
- Serve the Ropa Vieja hot, accompanied by rice or potatoes.
