Ingredients

  • 2 lbs flank steak
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. Season the flank steak with salt, pepper, cumin, and paprika.
  2. Heat 2 tbsp of olive oil in a large pot over medium-high heat. Sear the steak on both sides until browned, then remove and set aside.
  3. Heat the remaining 1 tbsp of olive oil in the same pot. Add the diced onion, bell pepper, and garlic. Cook until the vegetables are soft.
  4. Pour in the crushed tomatoes and beef broth. Stir to combine.
  5. Return the seared steak to the pot. Cover and simmer for 1.5-2 hours, or until the meat is tender and easily shreds with a fork.
  6. Remove the steak from the pot and shred it using two forks. Return the shredded meat to the pot and simmer for an additional 15 minutes.
  7. Adjust the seasoning with salt and pepper if needed.
  8. Serve the Ropa Vieja hot, accompanied by rice or potatoes.
