Old Fashioned Banana Pudding

Ingredients

  • 4 ripe bananas, sliced
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 box vanilla wafers

Instructions

  1. In a saucepan, combine the sugar, flour, and salt. Gradually stir in the milk.
  2. Cook and stir over medium heat until thickened and bubbly. Reduce heat and cook and stir for 2 minutes more.
  3. Remove from heat. Gradually stir about 1 cup of the hot mixture into the egg yolks, then return all to the saucepan. Bring to a gentle boil and cook and stir for 2 minutes.
  4. Remove from heat and stir in the vanilla extract.
  5. Layer the pudding with the sliced bananas and vanilla wafers in a serving dish.
  6. Beat the egg whites until stiff peaks form. Spread over the pudding, sealing to the edges of the dish.
  7. Bake at 350°F for 12-15 minutes or until the meringue is golden brown.
  8. Cool for at least 1 hour before serving.
