Old Fashioned Banana Pudding

Ingredients
- 4 ripe bananas, sliced
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups whole milk
- 3 large eggs, separated
- 1 teaspoon vanilla extract
- 1 box vanilla wafers
Instructions
- In a saucepan, combine the sugar, flour, and salt. Gradually stir in the milk.
- Cook and stir over medium heat until thickened and bubbly. Reduce heat and cook and stir for 2 minutes more.
- Remove from heat. Gradually stir about 1 cup of the hot mixture into the egg yolks, then return all to the saucepan. Bring to a gentle boil and cook and stir for 2 minutes.
- Remove from heat and stir in the vanilla extract.
- Layer the pudding with the sliced bananas and vanilla wafers in a serving dish.
- Beat the egg whites until stiff peaks form. Spread over the pudding, sealing to the edges of the dish.
- Bake at 350°F for 12-15 minutes or until the meringue is golden brown.
- Cool for at least 1 hour before serving.
