Ingredients
- 2 large red onions, thinly sliced
- 1 cup white vinegar
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 teaspoon whole black peppercorns
- 1 bay leaf
Instructions
- In a small saucepan, combine the white vinegar, sugar, salt, peppercorns, and bay leaf. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt are dissolved.
- Add the sliced onions to the saucepan and cook for 1-2 minutes, just until the onions begin to soften.
- Remove the saucepan from the heat and let the pickling liquid cool for 10 minutes.
- Transfer the pickled onions and the liquid to a clean jar and let them cool to room temperature.
- Once cooled, cover the jar and refrigerate the pickled onions for at least 1 hour before serving.
