Ingredients

  • 2 large red onions, thinly sliced
  • 1 cup white vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 bay leaf

Instructions

  1. In a small saucepan, combine the white vinegar, sugar, salt, peppercorns, and bay leaf. Bring the mixture to a simmer over medium heat, stirring until the sugar and salt are dissolved.
  2. Add the sliced onions to the saucepan and cook for 1-2 minutes, just until the onions begin to soften.
  3. Remove the saucepan from the heat and let the pickling liquid cool for 10 minutes.
  4. Transfer the pickled onions and the liquid to a clean jar and let them cool to room temperature.
  5. Once cooled, cover the jar and refrigerate the pickled onions for at least 1 hour before serving.
