Olivier (armenian Potato Salad)

Ingredients
- 4 large potatoes, boiled and diced
- 3 carrots, boiled and diced
- 4 hard-boiled eggs, diced
- 1 cup frozen peas, thawed
- 1 cup diced dill pickles
- 1 cup diced cooked chicken (optional)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the potatoes, carrots, eggs, peas, pickles, and chicken (if using).
- In a small bowl, mix the mayonnaise and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the salad and gently toss to combine.
