Ingredients
- 2 lbs beef stew meat, cut into chunks
- 3 large carrots, peeled and sliced
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 cups water
- 1 cup tomato sauce
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium-high heat.
- Add the chopped onion and minced garlic, and cook until the onion is translucent.
- Pour in the beef broth, water, and tomato sauce. Stir in the cumin, oregano, salt, and pepper.
- Bring the liquid to a boil, then reduce the heat to low and let the stew simmer for 1 hour.
- Add the carrots and potatoes to the pot and continue to simmer for an additional 30-45 minutes, or until the vegetables are tender.
- Adjust the seasoning if needed, and serve the Olla de Carne hot with a side of white rice and plantains.
