Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 3 large carrots, peeled and sliced
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 cups water
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef stew meat over medium-high heat.
  2. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  3. Pour in the beef broth, water, and tomato sauce. Stir in the cumin, oregano, salt, and pepper.
  4. Bring the liquid to a boil, then reduce the heat to low and let the stew simmer for 1 hour.
  5. Add the carrots and potatoes to the pot and continue to simmer for an additional 30-45 minutes, or until the vegetables are tender.
  6. Adjust the seasoning if needed, and serve the Olla de Carne hot with a side of white rice and plantains.
