Ingredients
- 1 kg fresh octopus, cleaned and tenderized
- 4 tomatoes, diced
- 1 red onion, thinly sliced
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- Place the octopus in a large pot of boiling water and cook for 1 hour or until tender. Drain and let it cool.
- Cut the octopus into bite-sized pieces and place in a large bowl.
- Add the diced tomatoes and sliced red onion to the bowl.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the octopus mixture and toss to combine.
- Sprinkle with chopped parsley and refrigerate for at least 1 hour before serving.
