Šolta Island Octopus Salad (Salata od hobotnice s otoka Šolte)

Ingredients

  • 1 kg fresh octopus, cleaned and tenderized
  • 4 tomatoes, diced
  • 1 red onion, thinly sliced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Place the octopus in a large pot of boiling water and cook for 1 hour or until tender. Drain and let it cool.
  2. Cut the octopus into bite-sized pieces and place in a large bowl.
