Omo Tuo Treat
Omo Tuo, also known as Rice Balls, is a popular Ghanaian dish made from rice and served with a savory soup or stew. This recipe offers a unique twist on the traditional Omo Tuo by adding a special treat to the rice balls.
Ingredients
- 2 cups of jasmine rice
- 4 cups of water
- 1 teaspoon of salt
- 1 cup of shredded chicken
- 1 onion, chopped
- 2 tomatoes, diced
- 1 tablespoon of vegetable oil
- 1 teaspoon of ginger, minced
- 1 teaspoon of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of curry powder
- 4 cups of chicken broth
Instructions
- Rinse the jasmine rice under cold water.
- In a large pot, bring the water to a boil and add the rice and salt. Reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, heat the vegetable oil in a separate pot over medium heat. Add the onions, tomatoes, ginger, and garlic. Cook until the vegetables are soft.
- Add the shredded chicken, paprika, and curry powder to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the chicken broth and bring to a simmer. Let it cook for 10 minutes.
- Once the rice is cooked, let it cool slightly. Then, wet your hands and shape the rice into small balls.
- Serve the rice balls with the savory chicken soup.
