Omo Tuo Twist

Ingredients

  • 2 cups of jasmine rice
  • 1 cup of roasted peanuts
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, chopped
  • 1 teaspoon of ginger, minced
  • 1 teaspoon of garlic, minced
  • 1 teaspoon of paprika
  • 1 teaspoon of curry powder
  • 1 teaspoon of dried thyme
  • 6 cups of chicken or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice and place it in a large pot with 4 cups of water. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the rice is cooked and sticky. Allow it to cool slightly.
  2. In a blender, combine the roasted peanuts with 1 cup of water and blend until smooth to make peanut butter.
  3. In a separate pot, heat some oil over medium heat and sauté the onions, tomatoes, bell pepper, scotch bonnet pepper, ginger, and garlic until softened.
  4. Add the paprika, curry powder, and dried thyme to the pot and stir to combine with the vegetables.
  5. Pour in the chicken or vegetable broth and bring the soup to a simmer. Let it cook for 20-30 minutes, allowing the flavors to meld together.
  6. Add the peanut butter to the soup and stir until well incorporated. Season with salt and pepper to taste.
  7. To make the Omo Tuo, wet your hands and form the cooked rice into small balls.
  8. Serve the Omo Tuo with the peanut soup and enjoy!
