Omo Tuo Twist
Omo Tuo Twist is a delicious Ghanaian dish that puts a unique spin on the traditional Omo Tuo. This recipe combines flavorful rice balls with a rich and aromatic peanut soup, creating a comforting and satisfying meal.
Ingredients
- 2 cups of jasmine rice
- 1 cup of roasted peanuts
- 1 onion, chopped
- 3 tomatoes, chopped
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- 1 teaspoon of ginger, minced
- 1 teaspoon of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of curry powder
- 1 teaspoon of dried thyme
- 6 cups of chicken or vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the jasmine rice and place it in a large pot with 4 cups of water. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the rice is cooked and sticky. Allow it to cool slightly.
- In a blender, combine the roasted peanuts with 1 cup of water and blend until smooth to make peanut butter.
- In a separate pot, heat some oil over medium heat and sauté the onions, tomatoes, bell pepper, scotch bonnet pepper, ginger, and garlic until softened.
- Add the paprika, curry powder, and dried thyme to the pot and stir to combine with the vegetables.
- Pour in the chicken or vegetable broth and bring the soup to a simmer. Let it cook for 20-30 minutes, allowing the flavors to meld together.
- Add the peanut butter to the soup and stir until well incorporated. Season with salt and pepper to taste.
- To make the Omo Tuo, wet your hands and form the cooked rice into small balls.
- Serve the Omo Tuo with the peanut soup and enjoy!
