Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the sliced onions and sauté until they are golden brown and caramelized, about 10 minutes.
  3. Rinse the basmati rice under cold water until the water runs clear.
  4. Add the rice to the pan with the caramelized onions and sauté for 2 minutes, stirring constantly.
  5. Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  6. Fluff the rice with a fork and garnish with chopped fresh cilantro before serving.
