Onion Rice

Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pan, heat the olive oil over medium heat.
- Add the sliced onions and sauté until they are golden brown and caramelized, about 10 minutes.
- Rinse the basmati rice under cold water until the water runs clear.
- Add the rice to the pan with the caramelized onions and sauté for 2 minutes, stirring constantly.
- Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and garnish with chopped fresh cilantro before serving.
