Onion Roast Beef (zwiebelrostbraten)

Ingredients

  • 2 lbs (900g) beef sirloin
  • 2 large onions, thinly sliced
  • 1/4 cup (60ml) vegetable oil
  • Salt and pepper to taste
  • 2 tbsp (30g) butter
  • 2 tbsp (15g) all-purpose flour
  • 1 cup (240ml) beef broth

Instructions

  1. Season the beef sirloin with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat.
  3. Sear the beef on all sides until browned, then remove from the skillet and set aside.
  4. Add the sliced onions to the skillet and cook until caramelized.
  5. Remove the onions from the skillet and set aside.
  6. In the same skillet, melt the butter and whisk in the flour to make a roux.
  7. Gradually pour in the beef broth, stirring constantly to make a gravy.
  8. Return the beef and caramelized onions to the skillet, cover, and simmer for 1 hour or until the beef is tender.
  9. Slice the roast beef and serve with the caramelized onions and gravy.
