Onion Roast Beef, or Zwiebelrostbraten, is a classic dish in Austrian cuisine. This flavorful roast beef is topped with caramelized onions and served with a side of creamy mashed potatoes or buttered spaetzle.
Ingredients
- 2 lbs (900g) beef sirloin
- 2 large onions, thinly sliced
- 1/4 cup (60ml) vegetable oil
- Salt and pepper to taste
- 2 tbsp (30g) butter
- 2 tbsp (15g) all-purpose flour
- 1 cup (240ml) beef broth
Instructions
- Season the beef sirloin with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Sear the beef on all sides until browned, then remove from the skillet and set aside.
- Add the sliced onions to the skillet and cook until caramelized.
- Remove the onions from the skillet and set aside.
- In the same skillet, melt the butter and whisk in the flour to make a roux.
- Gradually pour in the beef broth, stirring constantly to make a gravy.
- Return the beef and caramelized onions to the skillet, cover, and simmer for 1 hour or until the beef is tender.
- Slice the roast beef and serve with the caramelized onions and gravy.
