Ingredients

  • 4 large onions, thinly sliced
  • 10-12 red chilies, stemmed and chopped
  • 3 cloves garlic, minced
  • 1 teaspoon shrimp paste
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. In a mortar and pestle, grind the chilies, garlic, shrimp paste, tamarind paste, sugar, and salt into a smooth paste.
  2. Heat the oil in a pan over medium heat. Add the sliced onions and sauté until golden brown.
  3. Add the chili paste to the onions and cook for 5-7 minutes, stirring frequently.
  4. Remove from heat and let the sambal cool before serving.
