Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Stir in the chopped pistachios and orange zest.
  4. In a separate bowl, whisk together the orange juice, eggs, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  6. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide.
  7. Place the logs on the prepared baking sheet and bake for 25 minutes, or until firm to the touch.
  8. Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).
  9. Using a serrated knife, slice the logs into 1/2-inch thick biscotti.
  10. Place the biscotti cut side down on the baking sheet and bake for an additional 10 minutes.
  11. Transfer to a wire rack to cool completely.
