Ingredients
- 4 fresh oysters
- 2 large eggs
- 2 tablespoons tapioca starch
- 2 tablespoons water
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- 1 stalk spring onion, chopped
- 1 red chili, sliced (optional)
- Salt and pepper to taste
Instructions
- Shuck the oysters and set aside.
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- In a separate bowl, mix the tapioca starch with water to form a slurry.
- Heat the vegetable oil in a non-stick pan over medium heat.
- Sauté the minced garlic until fragrant.
- Pour the egg mixture into the pan and spread it out evenly.
- Arrange the oysters on top of the omelette.
- Drizzle the tapioca starch slurry over the omelette and let it cook until the edges are crispy.
- Garnish with chopped spring onion and sliced red chili, if using.
- Serve hot with your favorite chili sauce.
