Ingredients

  • 4 fresh oysters
  • 2 large eggs

  • 1 stalk spring onion, chopped
  • 1 red chili, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Shuck the oysters and set aside.
  2. In a bowl, whisk the eggs with a pinch of salt and pepper.
  3. In a separate bowl, mix the tapioca starch with water to form a slurry.
  4. Heat the vegetable oil in a non-stick pan over medium heat.
  5. Sauté the minced garlic until fragrant.
  6. Pour the egg mixture into the pan and spread it out evenly.
  7. Arrange the oysters on top of the omelette.
  8. Drizzle the tapioca starch slurry over the omelette and let it cook until the edges are crispy.
  9. Garnish with chopped spring onion and sliced red chili, if using.
  10. Serve hot with your favorite chili sauce.
