Ingredients
- 6 fresh oysters
- 3 large eggs
- 1/2 cup tapioca flour
- 1/4 cup water

- 2 stalks spring onions, chopped
- Chili sauce (optional, for serving)
Instructions
- Shuck the fresh oysters and set aside.
- In a bowl, whisk the eggs, tapioca flour, water, salt, and white pepper until smooth.
- Heat 1 tablespoon of cooking oil in a non-stick pan over medium heat.
- Add the oysters to the pan and cook for 1-2 minutes.
- Pour the egg mixture over the oysters and cook for 3-4 minutes, until the bottom is golden and crispy.
- Flip the omelette and cook for another 2-3 minutes.
- Transfer the omelette to a serving plate and garnish with chopped spring onions.
- Serve hot with chili sauce on the side, if desired.
