Ingredients

  • 2 stalks spring onions, chopped

Instructions

  1. Shuck the fresh oysters and set aside.
  2. In a bowl, whisk the eggs, tapioca flour, water, salt, and white pepper until smooth.
  3. Heat 1 tablespoon of cooking oil in a non-stick pan over medium heat.
  4. Add the oysters to the pan and cook for 1-2 minutes.
  5. Pour the egg mixture over the oysters and cook for 3-4 minutes, until the bottom is golden and crispy.
  6. Flip the omelette and cook for another 2-3 minutes.
  7. Transfer the omelette to a serving plate and garnish with chopped spring onions.
  8. Serve hot with chili sauce on the side, if desired.
