Ingredients
- 1 sheet of ready-rolled shortcrust pastry
- 2 large onions, thinly sliced
- 200g Orkney cheddar cheese, grated
- 3 eggs
- 200ml double cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Line a 9-inch tart tin with the shortcrust pastry and trim off any excess.
- In a pan, sauté the sliced onions until soft and golden.
- Sprinkle half of the grated Orkney cheddar cheese over the pastry base.
- Spread the sautéed onions over the cheese.
- In a bowl, whisk together the eggs, double cream, salt, and pepper.
- Pour the egg mixture over the onions and cheese in the tart tin.
- Top with the remaining grated Orkney cheddar cheese.
- Bake in the preheated oven for 35-40 minutes, or until the tart is set and golden.
- Allow the tart to cool slightly before serving.
