Osaka Okonomiyaki Delight

Ingredients
- 2 cups all-purpose flour
- 2 cups shredded cabbage
- 4 green onions, chopped
- 1/2 cup tenkasu (tempura scraps)
- 1/2 cup cooked, chopped bacon or pork belly
- 1 1/2 cups dashi stock
- 4 eggs
- 1/2 cup okonomiyaki sauce
- 1/4 cup mayonnaise
- 1/4 cup aonori (dried green seaweed)
- 1/4 cup katsuobushi (bonito flakes)
Instructions
- In a large bowl, combine the flour, cabbage, green onions, tenkasu, and bacon.
- In a separate bowl, whisk together the dashi stock and eggs. Pour this mixture into the flour and cabbage mixture and stir until just combined.
- Heat a non-stick griddle or large frying pan over medium heat. Pour a quarter of the batter onto the griddle and spread it into a circle about 1/2 inch thick.
- Cook for 5 minutes, or until the bottom is golden brown. Flip the okonomiyaki and cook for an additional 5 minutes.
- Transfer the cooked okonomiyaki to a plate and drizzle with okonomiyaki sauce and mayonnaise. Sprinkle with aonori and katsuobushi before serving.
