Osh (silk Road Lamb Pilaf)
Osh, also known as Silk Road Lamb Pilaf, is a traditional dish from Uzbek cuisine that is rich in flavors and aromas. This hearty pilaf is made with tender lamb, fragrant spices, and long-grain rice, creating a satisfying and comforting meal.
Ingredients
- 1 lb lamb, cut into chunks
- 2 cups long-grain rice
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, julienned
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onion and minced garlic to the pot, and sauté until the onion is soft and translucent.
- Stir in the cumin, paprika, and turmeric, and cook for another minute to toast the spices.
- Add the julienned carrots and rice to the pot, and stir to combine with the lamb and spices.
- Pour in the chicken broth, season with salt and pepper, and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilaf with a fork, and let it rest for 5 minutes before serving.
