Ingredients

  • 1 lb lamb, cut into chunks
  • 2 cups long-grain rice
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, julienned
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot, and sauté until the onion is soft and translucent.
  3. Stir in the cumin, paprika, and turmeric, and cook for another minute to toast the spices.
  4. Add the julienned carrots and rice to the pot, and stir to combine with the lamb and spices.
  5. Pour in the chicken broth, season with salt and pepper, and bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let the pilaf simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  7. Fluff the pilaf with a fork, and let it rest for 5 minutes before serving.
