Osh (spiced Lamb Pilaf)
Osh is a traditional Tajik dish that consists of spiced lamb and rice, creating a flavorful and aromatic pilaf. This recipe is a staple in Tajik cuisine and is perfect for special occasions or family gatherings.
Ingredients
- 1 lb lamb, cut into chunks
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 4 cups chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and cook until browned on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Stir in the cumin, paprika, and turmeric, coating the lamb and onion mixture with the spices.
- Add the basmati rice to the pot and stir to combine with the lamb and spices.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve the Osh hot.
