Osh (spiced Lamb Pilaf)

Ingredients

  • 1 lb lamb, cut into chunks
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the lamb chunks and cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the cumin, paprika, and turmeric, coating the lamb and onion mixture with the spices.
  4. Add the basmati rice to the pot and stir to combine with the lamb and spices.
  5. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and serve the Osh hot.
