Ostefondue (danish Cheese Fondue)

Ingredients

  • 400g Danish Havarti cheese, grated
  • 200g Danish Blue cheese, crumbled
  • 1 clove garlic, halved
  • 1 cup dry white wine
  • 1 tablespoon cornstarch
  • Freshly ground black pepper
  • 1 loaf of crusty bread, cut into bite-sized cubes

Instructions

  1. In a bowl, toss the grated Havarti cheese and crumbled Blue cheese with cornstarch until well coated.
  2. Rub the inside of a fondue pot with the cut sides of the garlic clove.
  3. Pour the white wine into the fondue pot and heat over medium heat until it starts to simmer.
  4. Gradually add the cheese mixture to the pot, stirring constantly in a figure-eight motion until the cheese is melted and smooth.
  5. Season with freshly ground black pepper to taste.
  6. Place the fondue pot over a fondue burner at the table and serve with the cubed bread for dipping.
