Ingredients
- 500g ostrich meat, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups tomato puree
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Add the ostrich meat cubes and brown on all sides.
- Stir in the paprika, cumin, coriander, salt, and black pepper.
- Pour in the tomato puree, chicken broth, and tomato paste. Stir to combine.
- Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.
- Sprinkle with chopped fresh parsley before serving.
