Ingredients

  • 500g ostrich meat, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups tomato puree
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Add the ostrich meat cubes and brown on all sides.
  4. Stir in the paprika, cumin, coriander, salt, and black pepper.
  5. Pour in the tomato puree, chicken broth, and tomato paste. Stir to combine.
  6. Reduce the heat to low, cover, and simmer for 1 hour, stirring occasionally.
  7. Sprinkle with chopped fresh parsley before serving.
